Recipe of the Month #2

One of my favorite episodes of Remington Steele is a madcap chase through Los Angeles for a recipe for chocolate chip cookies that is absolutely delicious and -bonus- has 0 calories. Since that isn't an option in real life, I have been working on a recipe that has less calories. These cookies have beans and wheat flour in them to up the health factor, and trust me--your family will never know!

Healthy & Delicious Chocolate Chip Cookies
1/2 C cooked, pureed white beans (I like to cook 2 or 3 cups of white beans in the crock-pot overnight, then blend them and freeze them in the amounts needed.)
1/4 C softened butter
1/4 C Crisco
1 C brown sugar
3/4 C white sugar
2 tsp vanilla
2 eggs
1 1/2 C wheat flour
1 1/2 C white flour
1 tsp baking soda
1/2 tsp salt
Enough chocolate chips to suit you

In a large bowl, combine beans, butter and Crisco. Stir until mixed. Add sugars and stir again. Add vanilla and eggs and stir again. Add soda, salt and 1 C flour and mix. Add remaining flour and stir until well mixed. Add chocolate chips and mix. Drop dough by spoonfuls onto greased cookie sheet. Bake at 350 degrees for 10-11 minutes.

My mom is the one who taught me about the beans and it works great in brownies too. Don't eliminate the butter in the recipe altogether because you still need some for taste and correct consistency. This is a great tip for when we need to use our food storage!
