As I mentioned, my Grandma Janet is a champion pie maker. She makes the best cream pies of anyone, and her best cream pie is Lemon Cloud. Since you know how much I love lemons, you know this is right up my alley.
Lemon Cloud Pie
1 cup sugar
1 cup water
2 egg yolks slightly beaten
3 heaping tablespoons cornstarch
1/3 cup lemon juice (fresh is best)
4 ounces softened cream cheese
1-2 tablespoons lemon peel
1/2 cup unsweetened whipped cream
Cook sugar, water, egg yolks, cornstarch and lemon juice in small saucepan over medium heat until thick. Once mixture has cooled slightly, pass it through a strainer to remove any eggy lumps. Add cream cheese and stir until smooth. Then add lemon peel and whipped cream. Pour into baked pie shell and chill for at least 1 hour. Top with whipped cream and enjoy!
Somehow, we had a whole lemon cloud pie left over from Thanksgiving, and Grandma Janet had planned on serving it for dessert on Sunday when we went for dinner. However, we had to be at my Papa's house by a certain time, and in our hurry to go, we accidentally left without dessert. I wanted to cry when I realized we'd missed out! I'm going to have to make myself some, and soon.
