recipe of the month

I found this month's recipe in a Chop Chop magazine that the doctor's office gives away. If you haven't ever seen this awesome magazine, I highly recommend it. It is full of quick, easy, HEALTHY meals that kids can help cook and will actually want to eat. And none of the recipes require you to scrape a vanilla bean or swing a dead cat in a graveyard or some other nonsense like that.
 
Herby Lettuce Wraps
1 tablespoon vegetable oil or generous amount of non-stick spray
3 green onions, sliced
2 garlic cloves, pressed
1 teaspoon grated fresh ginger (I keep mine in the freezer for easier peeling and grating and longer storage)
1 pound ground turkey
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar (or white)
soft lettuce leaves, like Bibb or butter varieties
2 cups fresh herbs--we like basil and cilantro best
 
Heat oil in skillet; add onions, garlic, ginger and ground turkey. Cook until browned and drain. Return to heat and add soy sauce and vinegar and cook until liquids are absorbed. Serve the turkey inside the lettuce leaves and top with herbs.
We love this meal! Jed really enjoys the "lettuce tacos" (although not the asparagus) and Hank devours small chunks of the meat with gusto. Any leftovers are delicious on a salad with some feta the next day, too. Hooray for easy summer cooking!
